Ingredients

  • 2 None plum tomatoes, quartered
  • None None Olive oil, for drizzling
  • 4 None flour tortillas
  • 4 slices ham
  • 6 None eggs
  • 1/3 cup milk
  • 1 tbsp chopped fresh flat-leaf parsley
  • 1 tbsp chopped fresh chives
  • 1 tbsp butter

Method

  • Preheat the oven to 350°F. Line a baking pan with parchment paper. Arrange tomatoes, cut-side up, on prepared pan. Drizzle with olive oil and season to taste. Bake for 15-20 mins, until beginning to collapse.
  • Meanwhile, warm tortillas according to package directions. Top each with a slice of ham. Whisk eggs, milk and herbs in a medium bowl. Season to taste.
  • Melt butter in a small saucepan on low heat. Pour in egg mixture. Cook gently, stirring occasionally, for 3-5 mins, until egg is just set but very creamy.
  • Spoon egg mixture and tomatoes onto warm tortillas. Roll up and serve immediately.
