Ingredients

  • 6 to 8 medium squash
  • 1 medium onion, diced
  • salt and pepper to taste
  • 2 Tbsp. butter
  • Parmesan cheese
  • 12 to 15 salted crackers, finely crumbled
  • 1 can condensed mushroom soup

Method

  • Stew squash and onion until tender enough to mash well.
  • Add salt, pepper and butter in a 1 1/2-quart casserole.
  • Put alternate layers of squash, cracker crumbs and undiluted mushroom soup. Bake at 400° until top begins to brown.
  • Sprinkle Parmesan cheese over top.
  • Makes 6 to 8 servings.
