Ingredients
- 6 to 8 medium squash
- 1 medium onion, diced
- salt and pepper to taste
- 2 Tbsp. butter
- Parmesan cheese
- 12 to 15 salted crackers, finely crumbled
- 1 can condensed mushroom soup
Method
- Stew squash and onion until tender enough to mash well.
- Add salt, pepper and butter in a 1 1/2-quart casserole.
- Put alternate layers of squash, cracker crumbs and undiluted mushroom soup. Bake at 400° until top begins to brown.
- Sprinkle Parmesan cheese over top.
- Makes 6 to 8 servings.
