- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 3 cloves garlic, minced
- 2 c. cooked macaroni
- 1/2 c. water
- 1 Tbsp. chili powder
- 1 tsp. cumin
- salt and pepper
- 1 c. chopped tomatoes
- 1 c. kidney beans
- 1 c. shredded sharp Cheddar cheese
Method
- Cook first 4 ingredients in large pan over medium heat until browned, stirring to crumble beef.
- Drain well.
- Wipe pan with paper towel.
- Return beef mixture to pan.
- Add cooked elbow macaroni and next 6 ingredients.
- Stir well.
- Bring to boil. Cover.
- Reduce heat and simmer 20 minutes.
- Top with cheese.
