Ingredients

  • 1 lb. ground beef
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 3 cloves garlic, minced
  • 2 c. cooked macaroni
  • 1/2 c. water
  • 1 Tbsp. chili powder
  • 1 tsp. cumin
  • salt and pepper
  • 1 c. chopped tomatoes
  • 1 c. kidney beans
  • 1 c. shredded sharp Cheddar cheese

Method

  • Cook first 4 ingredients in large pan over medium heat until browned, stirring to crumble beef.
  • Drain well.
  • Wipe pan with paper towel.
  • Return beef mixture to pan.
  • Add cooked elbow macaroni and next 6 ingredients.
  • Stir well.
  • Bring to boil. Cover.
  • Reduce heat and simmer 20 minutes.
  • Top with cheese.
