Ingredients

  • 1 whole wheat pizza crust (like Boboli)
  • 34 cup sun-dried tomato
  • 1 cup pizza sauce
  • 2 cups corn
  • 2 cups broccoli
  • 12 cup canned black beans, drained and rinsed
  • 2 cups part-skim mozzarella cheese
  • 1 cup mushroom
  • 23 medium eggplant, chopped
  • 1 teaspoon olive oil

Method

  • Sautee all veggies except broccoli in olive oil.
  • Top pizza crust with sauce, then half of mozzarella.
  • Top with veggies, and then remaining cheese.
  • Bake as directed on pizza crust package.
