- 3 ounces boneless skinless chicken breasts
- 3 tablespoons plain nonfat yogurt
- 2 teaspoons low-fat peanut butter, creamy
- 12 teaspoon low sodium soy sauce
- 12 teaspoon rice wine vinegar
- 18 teaspoon garlic powder
- 1 dash ground red pepper
- 3 cherry tomatoes
- 14 cup snow peas, blanched (I don't blanch them)
Method
- Preheat broiler.
- Place chicken in small broiler pan and broil 4 inches from heat until lightly browned, about 3 minutes.
- Turn and broil until other side is browned and chicken in cooked through.
- about 2 minutes longer depending on the thickness of the breast.
- set aside to cool.
- Cut into 1/2 inch diagonal slices.
- To prepare sauce, in small bowl, whisk together remaining ingredients, except tomatoes and snow peas.
- and 1 teaspoon water.
- Pour into small serving dish.
- To serve, fan chicken and snow peas alternately on serving plate.
- Add cherry tomatoes and sauce.
