Ingredients

  • 3 ounces boneless skinless chicken breasts
  • 3 tablespoons plain nonfat yogurt
  • 2 teaspoons low-fat peanut butter, creamy
  • 12 teaspoon low sodium soy sauce
  • 12 teaspoon rice wine vinegar
  • 18 teaspoon garlic powder
  • 1 dash ground red pepper
  • 3 cherry tomatoes
  • 14 cup snow peas, blanched (I don't blanch them)

Method

  • Preheat broiler.
  • Place chicken in small broiler pan and broil 4 inches from heat until lightly browned, about 3 minutes.
  • Turn and broil until other side is browned and chicken in cooked through.
  • about 2 minutes longer depending on the thickness of the breast.
  • set aside to cool.
  • Cut into 1/2 inch diagonal slices.
  • To prepare sauce, in small bowl, whisk together remaining ingredients, except tomatoes and snow peas.
  • and 1 teaspoon water.
  • Pour into small serving dish.
  • To serve, fan chicken and snow peas alternately on serving plate.
  • Add cherry tomatoes and sauce.
