Ingredients

  • 3 Tbsp. butter or margarine
  • 1/2 c. chopped onions
  • 1/2 c. chopped celery
  • 1/2 c. chopped green peppers
  • 1 c. shredded carrots
  • 1 c. diced fresh potatoes
  • 1 can chicken broth
  • 1 clove garlic, crushed
  • 3/4 tsp. dill weed
  • 1/2 tsp. pepper
  • 1 tsp. salt
  • 1 can creamed corn
  • 2 c. half and half or you can use evaporated milk
  • 2 c. cooked flaked salmon - either canned or fresh (fresh is much better - cook in the microwave)

Method

  • Saut onion, celery and green pepper in butter or margarine. Into pot, add carrots, potatoes, chicken broth, garlic, dill weed, pepper and salt.
  • Cook all on low until carrots and potatoes are done (about 30 minutes).
  • Add corn, half and half and salmon.
  • Heat and serve.
