- 3 Tbsp. butter or margarine
- 1/2 c. chopped onions
- 1/2 c. chopped celery
- 1/2 c. chopped green peppers
- 1 c. shredded carrots
- 1 c. diced fresh potatoes
- 1 can chicken broth
- 1 clove garlic, crushed
- 3/4 tsp. dill weed
- 1/2 tsp. pepper
- 1 tsp. salt
- 1 can creamed corn
- 2 c. half and half or you can use evaporated milk
- 2 c. cooked flaked salmon - either canned or fresh (fresh is much better - cook in the microwave)
Method
- Saut onion, celery and green pepper in butter or margarine. Into pot, add carrots, potatoes, chicken broth, garlic, dill weed, pepper and salt.
- Cook all on low until carrots and potatoes are done (about 30 minutes).
- Add corn, half and half and salmon.
- Heat and serve.
