Ingredients

  • 3 onions, chopped
  • 2 Tbsp. butter
  • 1 lb. ground lean beef
  • 1 garlic clove, minced
  • 3 c. beef stock
  • 2 large cans tomatoes
  • 1 c. each: potatoes, celery, green beans and carrots, diced
  • 1 c. dry red wine
  • 2 Tbsp. chopped parsley
  • 1/2 tsp. basil
  • 1/4 tsp. thyme
  • salt and pepper to taste

Method

  • In a soup kettle, cook onions in butter until they are tender and golden.
  • Stir in ground beef and garlic and cook the mixture (separating beef with a fork) until it is browned.
  • Add beef stock, tomatoes, potatoes, celery, green beans and carrots.
  • Then add rest of ingredients.
  • Bring to a boil, reduce heat and simmer for 1 to 1 1/2 hours.
