Ingredients
- 2 c. all-purpose flour
- 3 tsp. baking powder
- 1/2 c. sugar
- 1/2 tsp. salt
- 1 egg, beaten
- 1 c. milk
- 1/3 c. vegetable oil
- grated rind of 1/2 lemon
- 1 c. blueberries
Method
- Preheat
- oven
- to 425°.
- Sift together the dry ingredients. Toss in blueberries.
- Stir in mixture of egg, milk, oil and rind. For perfect muffins, do not overmix.
- Batter should look lumpy. Fill greased muffin cups 2/3 full. Sprinkle tops with
- little powdered
- sugar.
- Bake 20 to 25 minutes until muffins
- are puffed and golden.
- Run a knife around inside of each
- cup
- to
- loosen muffins
- and
- serve
- at once.
- Makes 12 muffins.
