Ingredients

  • 2 c. all-purpose flour
  • 3 tsp. baking powder
  • 1/2 c. sugar
  • 1/2 tsp. salt
  • 1 egg, beaten
  • 1 c. milk
  • 1/3 c. vegetable oil
  • grated rind of 1/2 lemon
  • 1 c. blueberries

Method

  • Preheat
  • oven
  • to 425°.
  • Sift together the dry ingredients. Toss in blueberries.
  • Stir in mixture of egg, milk, oil and rind. For perfect muffins, do not overmix.
  • Batter should look lumpy. Fill greased muffin cups 2/3 full. Sprinkle tops with
  • little powdered
  • sugar.
  • Bake 20 to 25 minutes until muffins
  • are puffed and golden.
  • Run a knife around inside of each
  • cup
  • to
  • loosen muffins
  • and
  • serve
  • at once.
  • Makes 12 muffins.
