- 1 lb. medium shrimp
- 1 lb. scallops
- 2 c. quick cooking rice
- 1 c. cream
- 1 c. butter, melted
- 2 tsp. Old Bay seasoning
- 1/2 c. clam juice
- 1/2 c. white wine
- 4 cloves garlic, chopped
- 3 Tbsp. onion tops
- 1 c. grated Cheddar cheese
Method
- Place rice in a 2-quart baking dish.
- Add scallops (chopped if sea scallops) and shrimp.
- Combine cream, melted butter, clam juice, wine, seafood seasoning and chopped garlic.
- Add to baking dish.
- Sprinkle with chopped onion tops and grated cheese.
- Bake at 350° for 25 minutes.
