Ingredients

  • 1 lb. medium shrimp
  • 1 lb. scallops
  • 2 c. quick cooking rice
  • 1 c. cream
  • 1 c. butter, melted
  • 2 tsp. Old Bay seasoning
  • 1/2 c. clam juice
  • 1/2 c. white wine
  • 4 cloves garlic, chopped
  • 3 Tbsp. onion tops
  • 1 c. grated Cheddar cheese

Method

  • Place rice in a 2-quart baking dish.
  • Add scallops (chopped if sea scallops) and shrimp.
  • Combine cream, melted butter, clam juice, wine, seafood seasoning and chopped garlic.
  • Add to baking dish.
  • Sprinkle with chopped onion tops and grated cheese.
  • Bake at 350° for 25 minutes.
