Ingredients

  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup agave nectar
  • 1/3 cup vegetable oil
  • 1/2 orange
  • 1/4 cup milk
  • 1 1/2 cups zucchini grated
  • 1 1/4 teaspoons baking soda
  • 1 pinch salt
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon cinnamon ground
  • 1/4 teaspoon nutmeg ground
  • 1/4 teaspoon ginger ground
  • 1 cup nuts ground

Method

  • Preheat the oven to 180C.
  • Mix the egg, vanilla, agave nectar, vegetable oil, orange juice, and milk in a large bowl.
  • Add the zucchini and beat with a whisk until the ingredients are completely mixed.
  • Mix the baking soda, salt, whole wheat flour, cinnamon, nutmeg, and ginger in a medium bowl.
  • Add the mixed flour to the large bowl and beat until the flour is no longer visible.
  • Add the nuts, pour the mixture into a muffin tray, and place the tray in the oven. Bake for 15 to 20 minutes.
  • Remove the muffins from the oven, let them cool completely, and serve.
