- 1 egg
- 1 teaspoon vanilla
- 1/2 cup agave nectar
- 1/3 cup vegetable oil
- 1/2 orange
- 1/4 cup milk
- 1 1/2 cups zucchini grated
- 1 1/4 teaspoons baking soda
- 1 pinch salt
- 1 1/2 cups whole wheat flour
- 1 teaspoon cinnamon ground
- 1/4 teaspoon nutmeg ground
- 1/4 teaspoon ginger ground
- 1 cup nuts ground
Method
- Preheat the oven to 180C.
- Mix the egg, vanilla, agave nectar, vegetable oil, orange juice, and milk in a large bowl.
- Add the zucchini and beat with a whisk until the ingredients are completely mixed.
- Mix the baking soda, salt, whole wheat flour, cinnamon, nutmeg, and ginger in a medium bowl.
- Add the mixed flour to the large bowl and beat until the flour is no longer visible.
- Add the nuts, pour the mixture into a muffin tray, and place the tray in the oven. Bake for 15 to 20 minutes.
- Remove the muffins from the oven, let them cool completely, and serve.
