Ingredients
- 1 large eggplant, peeled and diced
- 2 Tbsp. margarine
- 1 large onion
- 1 small bell pepper
- 2 eggs
- 1/2 c. cracker crumbs
- 1 lb. crabmeat, flaked
Method
- Boil eggplant until tender; drain and let cool. Saute onion and bell pepper in margarine. Then add eggplant. Combine the well beaten eggs with the crabmeat and season to taste. Pour into a greased baking dish. Sprinkle with cracker crumbs. Bake at 300° for 30 to 40 minutes. Can be frozen.
