Ingredients

  • 1 c. all purpose flour
  • 1 1/2 c. all bran cereal
  • 1 1/2 teaspoon artificial sweetener
  • 1 egg white, lg. or possibly med. (or possibly 2 small)
  • 1 c. whole wheat flour
  • 1 teaspoon baking pwdr
  • 1 1/2 c. skim lowfat milk
  • 1 tbsp. corn oil

Method

  • Slightly beat egg white with fork.
  • Add in lowfat milk, corn oil, and sweetener to egg white.
  • Mix well.
  • Measure flour, whole wheat flour, cereal, salt, and baking pwdr into large bowl.
  • Mix well.
  • Pour lowfat milk mix into dry ingredients, mix with a fork do not over mix.
  • Spray a 10 muffin pan with "Pam".
  • Pour batter into 10 muffin pan.
  • Bake at 375 degrees for 20 min.
  • Yield 10 muffins.
  • A good recipe for "dieting".
