- 2 Tbsp. vegetable oil
- 1 medium white onion, finely chopped
- 1 can (4 oz.) chopped green chilies
- 2 tsp. garlic powder
- 2 tsp. salt
- 2 tsp. ground cumin
- 2 tsp. ground oregano
- 2 tsp. ground coriander
- 1/2 tsp. cayenne
- 2 cans (15 oz. each) Great Northern beans (do not drain)
- 2 cans (10 oz. each) chicken broth
- 2 cans (5 oz. each) chicken, drained
Method
- In a large pot, heat oil over medium heat.
- Add onion; saute until brown.
- Add next 7 ingredients; stir until well blended. Stir in remaining ingredients.
- Bring to a boil, reduce heat to low and simmer 15 to 20 minutes.
- Yield:
- 8 to 10 servings.
