Ingredients
- 2 Tbsp. butter
- 1 small onion, chopped
- 4 c. cubed potatoes
- 3 c. sliced carrots
- 6 c. chicken broth
- salt to taste
- 1/8 tsp. white pepper
- 2 c. half and half or milk
Method
- Serve hot or cold.
- Melt butter in large saucepan, cook onion several minutes.
- Add potatoes, carrots, salt and pepper and broth. Bring to a boil.
- Reduce heat; simmer for 30 minutes until vegetables are done.
- Puree in blender.
- Return to pan.
- Add milk and heat to serving temperature if desired.
- Garnish with shredded carrots.
- Makes 8 servings.
