Ingredients

  • 2 Tbsp. butter
  • 1 small onion, chopped
  • 4 c. cubed potatoes
  • 3 c. sliced carrots
  • 6 c. chicken broth
  • salt to taste
  • 1/8 tsp. white pepper
  • 2 c. half and half or milk

Method

  • Serve hot or cold.
  • Melt butter in large saucepan, cook onion several minutes.
  • Add potatoes, carrots, salt and pepper and broth. Bring to a boil.
  • Reduce heat; simmer for 30 minutes until vegetables are done.
  • Puree in blender.
  • Return to pan.
  • Add milk and heat to serving temperature if desired.
  • Garnish with shredded carrots.
  • Makes 8 servings.
