Ingredients

  • 8 oz. ziti (or penne) pasta, cooked and drained
  • 1 Tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 large garlic cloves, crushed
  • 2 Tbsp. butter
  • 3 Tbsp. all purpose flour
  • 1 1/2 c. fat-free half-and-half
  • 1 c. fat-free milk
  • 1 c. grated Parmesan cheese
  • 2 tsp. dried Italian seasoning
  • Salt and pepper, to taste
  • 1 (14.5 oz.) can diced tomatoes with Italian herbs
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed, drained

Method

  • In a large pot, cook pasta according to package directions. In a small saucepan, saute onions and garlic in olive oil till browned.
  • In a large saucepan, melt butter, add flour and stir. Slowly, add half-and-half and milk and simmer, stirring constantly, till thickened.
  • Add cheese and seasonings; stir till cheese melts.
  • Add tomatoes, spinach and onion mixture; heat through.
  • Pour over warm pasta, toss and serve.
  • Leftovers can be refrigerated and reheated in the microwave.
