- 8 oz. ziti (or penne) pasta, cooked and drained
- 1 Tbsp. extra-virgin olive oil
- 1 medium onion, chopped
- 2 large garlic cloves, crushed
- 2 Tbsp. butter
- 3 Tbsp. all purpose flour
- 1 1/2 c. fat-free half-and-half
- 1 c. fat-free milk
- 1 c. grated Parmesan cheese
- 2 tsp. dried Italian seasoning
- Salt and pepper, to taste
- 1 (14.5 oz.) can diced tomatoes with Italian herbs
- 1 (10 oz.) pkg. frozen chopped spinach, thawed, drained
Method
- In a large pot, cook pasta according to package directions. In a small saucepan, saute onions and garlic in olive oil till browned.
- In a large saucepan, melt butter, add flour and stir. Slowly, add half-and-half and milk and simmer, stirring constantly, till thickened.
- Add cheese and seasonings; stir till cheese melts.
- Add tomatoes, spinach and onion mixture; heat through.
- Pour over warm pasta, toss and serve.
- Leftovers can be refrigerated and reheated in the microwave.
