Ingredients

  • 2 Tbsp. green pepper
  • 1 Tbsp. instant minced onion
  • 1 (1 lb. 13 oz.) can tomatoes
  • 1 can yellow cornmeal
  • 1 egg
  • 1 1/2 tsp. chili con carne seasoning powder
  • 1/2 tsp. soda
  • 1 tsp. salt
  • 1 c. shredded Cheddar cheese

Method

  • Combine green pepper, instant onion and tomatoes in mixing bowl.
  • Let stand 4 or 5 minutes.
  • Stir in cornmeal, egg, chili con carne seasoning powder, soda, salt and cheese.
  • Mix thoroughly. Pour into a well-buttered 1 1/2-quart casserole.
  • Bake in 350° oven for 1 hour or until firm.
  • Spoon out onto plate and serve hot, either plain or with butter.
  • Makes 8 servings.
