Ingredients
- watermelon rind (white only)
- 4 c. vinegar
- 12 c. sugar
- 1 pkg. stick cinnamon
- 2 Tbsp. whole cloves
- 1 tsp. alum
Method
- Peel rind from melon.
- Cut off green outer rind and any pink flesh.
- Cut into bite-size pieces.
- Cover with water and add alum. Stir and bring to a boil.
- Simmer for 1 hour.
- Combine vinegar, sugar and spices and bring to a boil.
- Add the rind and bring to a boil again.
- Place in jars and seal.
