Ingredients

  • red leaf, endive, romaine, Boston or bibb lettuce (3 c.), torn into bite-size pieces
  • 1/2 large red pepper
  • 1/2 large yellow pepper
  • 1 to 2 celery ribs
  • 2 carrots
  • 1 leek
  • 1/2 lb. fresh mushrooms
  • 2 shallots
  • salt and pepper to taste
  • 2 Tbsp. unsalted butter
  • 2 Tbsp. heavy cream
  • 1 Tbsp. grainy mustard
  • 1 tsp. Dijon mustard
  • 1 Tbsp. plus 2 tsp. sherry wine vinegar
  • 1 Tbsp. water
  • 1/4 c. salad oil

Method

  • Dressing:
  • Combine mustard, vinegar, water, salt and pepper in a small bowl.
  • Whisk in oil.
  • Set aside.
