- red leaf, endive, romaine, Boston or bibb lettuce (3 c.), torn into bite-size pieces
- 1/2 large red pepper
- 1/2 large yellow pepper
- 1 to 2 celery ribs
- 2 carrots
- 1 leek
- 1/2 lb. fresh mushrooms
- 2 shallots
- salt and pepper to taste
- 2 Tbsp. unsalted butter
- 2 Tbsp. heavy cream
- 1 Tbsp. grainy mustard
- 1 tsp. Dijon mustard
- 1 Tbsp. plus 2 tsp. sherry wine vinegar
- 1 Tbsp. water
- 1/4 c. salad oil
Method
- Dressing:
- Combine mustard, vinegar, water, salt and pepper in a small bowl.
- Whisk in oil.
- Set aside.
