Ingredients

  • 9 Medium Red Potatoes
  • 6 slices Bacon
  • 1 Medium Size Onion, Chopped
  • 1/3 cups Apple Cider Vinegar
  • 1 teaspoon Good Dijon Mustard, Optional
  • 2 Tablespoons White Sugar
  • 2 teaspoons Salt
  • 1/2 teaspoons Celery Seed
  • 1/4 teaspoons Black Pepper
  • Chopped Fresh Parsley For Garnish

Method

  • Clean and cut potatoes into 1-inch cubes. Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 30 minutes. Drain and set aside. Place bacon in a large, deep skillet. Cook over medium high heat when it is halfway cooked. Add onion and cook until onion is golden brown and bacon is crispy. Remove from heat and add potatoes to the bacon, drippings and onion, and set aside.
  • In a small bowl, whisk together the vinegar, mustard, sugar, salt, celery seed, and pepper. Pour over the warm potatoes, onion and bacon. Toss lightly and transfer to a serving platter or bowl. Garnish with fresh parsley. Serve warm.
