Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 to 4 Tbsp. oil (for sauteing)
  • 2 to 4 Tbsp. flour
  • 4 chopped, peeled potatoes
  • 3 to 4 large carrots, chopped
  • 2 to 3 ribs celery, chopped
  • 3 plum tomatoes, chopped
  • 1/4 c. chopped parsley
  • salt and pepper to taste
  • 6 drops Maggi brand seasoning (optional)

Method

  • Saute onion and garlic in oil until translucent.
  • Add the flour.
  • Make a roux over low flame.
  • Add vegetables and stir, then add 3 1/2 to 4 quarts of cold water.
  • Cook for 45 minutes over low to medium heat.
  • And the Maggi brand seasoning, if desired. Serve, garnished with chopped parsley.
