Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 to 4 Tbsp. oil (for sauteing)
- 2 to 4 Tbsp. flour
- 4 chopped, peeled potatoes
- 3 to 4 large carrots, chopped
- 2 to 3 ribs celery, chopped
- 3 plum tomatoes, chopped
- 1/4 c. chopped parsley
- salt and pepper to taste
- 6 drops Maggi brand seasoning (optional)
Method
- Saute onion and garlic in oil until translucent.
- Add the flour.
- Make a roux over low flame.
- Add vegetables and stir, then add 3 1/2 to 4 quarts of cold water.
- Cook for 45 minutes over low to medium heat.
- And the Maggi brand seasoning, if desired. Serve, garnished with chopped parsley.
