Ingredients

  • 2 1/2 c. flour
  • 2 c. sugar
  • 1 Tbsp. pumpkin pie spice
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 c. solid pack pumpkin
  • 1/2 c. oil
  • 2 c. finely chopped Granny Smith apples

Method

  • Preheat oven to 350°.
  • Combine first 5 ingredients in large bowl; set aside.
  • In a medium bowl combine eggs, oil and pumpkin with electric mixer.
  • Add liquid to dry ingredients.
  • Beat on low speed until moistened.
  • Stir in apples.
  • Spoon batter into greased and floured Bundt pan (I spray it with Baker's Joy, works like a dream).
  • Bake 60 minutes.
  • Cool 10 minutes and remove from pan. When completely cool, sprinkle with powdered sugar.
  • Great in the fall with coffee.
