Ingredients
- 2 1/2 c. flour
- 2 c. sugar
- 1 Tbsp. pumpkin pie spice
- 1 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 1 c. solid pack pumpkin
- 1/2 c. oil
- 2 c. finely chopped Granny Smith apples
Method
- Preheat oven to 350°.
- Combine first 5 ingredients in large bowl; set aside.
- In a medium bowl combine eggs, oil and pumpkin with electric mixer.
- Add liquid to dry ingredients.
- Beat on low speed until moistened.
- Stir in apples.
- Spoon batter into greased and floured Bundt pan (I spray it with Baker's Joy, works like a dream).
- Bake 60 minutes.
- Cool 10 minutes and remove from pan. When completely cool, sprinkle with powdered sugar.
- Great in the fall with coffee.
