Ingredients

  • 2 tablespoons promise buttery spread
  • 1/8 strip carrots
  • 1/8 strip red bell pepper
  • 1 bok choy small, thinly sliced (about 3 cups)
  • 2 cloves garlic finley chopped
  • 1 1/2 teaspoons fresh ginger
  • 2 teaspoons reduced sodium soy sauce
  • 4 ounces lo mein noodles or thin spaghetti, cooked according to package directions
  • 1 tablespoon lime juice
  • 1 cup edamame shelled and cooked

Method

  • Melt Promise(R) Buttery Spread in 12-inch nonstick skillet over medium-high heat and cook carrots and red pepper, stirring frequently, 4 minutes. Stir in bok choy and cook 2 minutes. Stir in garlic and ginger and cook 1 minute. Sprinkle with soy sauce. Add edamame and noodles and cook, tossing frequently, 1 minute or until heated through. Remove from heat, then stir in lime juice.
