- 2 medium eggplant, cut into 1/2-inch slices
- 1 Tbsp. butter or margarine
- 1/4 c. onion, chopped
- 1 clove garlic, minced
- 1 3/4 c. Prego regular spaghetti sauce
- 1/4 c. Burgundy or other dry red wine
- 1/4 c. freshly grated Stella Parmesan cheese (2 oz.)
- 1 c. shredded Stella Mozzarella cheese (4 oz.)
Method
- Arrange eggplant slices in single layer on cookie sheet; broil 4 inches from heat 5 minutes on each side or until lightly browned.
