Ingredients

  • 1 cup vegan refried beans
  • 1 medium ripe avocado
  • 1 medium tomatoes, chopped
  • 1 teaspoon lime juice
  • 4 whole wheat tortillas
  • 4 tablespoons salsa (mild, medium or hot, you choose)

Method

  • Reheat your refried beans in either the microwave or in a small sauce pan.
  • Slice open the Avocado, remove seed and scoop into a medium bowl.
  • Smush the avocado.
  • Add chopped tomatoes and lime juice to the avocado and mix.
  • Warm your tortillas (either 30 seconds in microwave or separately on warm fry pan or grill pan).
  • Build tacos -- put refried beans in tortillas, spoon on a quarter of the avocado mixture and your chosen salsa.
  • Serve right away.
