Ingredients
- 1 cup vegan refried beans
- 1 medium ripe avocado
- 1 medium tomatoes, chopped
- 1 teaspoon lime juice
- 4 whole wheat tortillas
- 4 tablespoons salsa (mild, medium or hot, you choose)
Method
- Reheat your refried beans in either the microwave or in a small sauce pan.
- Slice open the Avocado, remove seed and scoop into a medium bowl.
- Smush the avocado.
- Add chopped tomatoes and lime juice to the avocado and mix.
- Warm your tortillas (either 30 seconds in microwave or separately on warm fry pan or grill pan).
- Build tacos -- put refried beans in tortillas, spoon on a quarter of the avocado mixture and your chosen salsa.
- Serve right away.
