Ingredients

  • 2 c. sifted flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. soft butter or margarine
  • 1 c. sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. chopped pecans

Method

  • Sift flour, salt and baking powder together on a sheet of wax paper. Set aside. In a large mixing bowl, mix at medium speed. Mix butter until light. Gradually beat in sugar. Add egg and vanilla, beating until light and fluffy. At low speed, beat in half of the flour mixture. Mix in the rest of the flour mixture to form a stiff dough. Add nuts and mix well. Turn dough out onto a lightly floured surface. Divide dough into half with hands. Shape into a 7-inch long roll. Wrap in foil and refrigerate for 8 hours or overnight. Slice 1/8-inch thick and bake. Place 2-inches apart on an ungreased cookie sheet. Heat oven to 375°. Bake 8 to 10 minutes.
