- 2 Tbsp. unsalted butter
- 1/2 lb. mushrooms, thinly sliced
- 6 eggs
- 1/2 tsp. salt
- 1/4 c. grated Parmesan cheese
- 1/4 tsp. dried oregano
- 3 Tbsp. grated Parmesan cheese
- 2 Tbsp. olive oil
- 3 shallots or 2 scallions
- 2 Tbsp. half and half
- 1/2 tsp. pepper
- 1 Tbsp. chopped parsley
- 1/4 tsp. dried basil
Method
- Preheat broiler.
- Heat butter and oil together in 10-inch ovenproof skillet.
- Saute the mushrooms and shallots over medium-low heat, until soft and lightly golden, 5 to 10 minutes.
