Ingredients

  • 2 Tbsp. unsalted butter
  • 1/2 lb. mushrooms, thinly sliced
  • 6 eggs
  • 1/2 tsp. salt
  • 1/4 c. grated Parmesan cheese
  • 1/4 tsp. dried oregano
  • 3 Tbsp. grated Parmesan cheese
  • 2 Tbsp. olive oil
  • 3 shallots or 2 scallions
  • 2 Tbsp. half and half
  • 1/2 tsp. pepper
  • 1 Tbsp. chopped parsley
  • 1/4 tsp. dried basil

Method

  • Preheat broiler.
  • Heat butter and oil together in 10-inch ovenproof skillet.
  • Saute the mushrooms and shallots over medium-low heat, until soft and lightly golden, 5 to 10 minutes.
