Ingredients

  • 2 Tbsp. butter
  • 1/2 c. brown sugar
  • 1 c. sugar
  • 1 c. flour
  • 2 eggs
  • 1/3 c. fruit juice
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 16 oz. can pineapple rings
  • maraschino cherries

Method

  • Melt butter and brown sugar in heavy skillet and simmer a few minutes.
  • Mix sugar, flour, eggs, fruit juice, salt and baking powder.
  • Place pineapple rings in skillet.
  • Place cherries in center of each pineapple ring.
  • Pour cake batter over all.
  • Place skillet in preheated 350° oven and bake for 30 to 40 minutes. Flip over onto large cake plate immediately out of oven.
