Ingredients

  • Pastry for 2-crust 9-inch pie
  • 6 to 8 fully ripe bananas, cut in half, then halved lengthwise
  • 3/4 c. sugar
  • 1 teaspoon nutmeg
  • 2 tbsp. light rum
  • 1 tbsp. butter
  • 1 tbsp. evaporated lowfat milk

Method

  • Line pie pan with pastry, then arrange bananas in pan.
  • Mix sugar and nutmeg and pour over bananas.
  • Sprinkle with rum and dot with butter.
  • Top with pastry, slit in a few places and brush with evaporated lowfat milk.
  • Bake in very warm 450 degree oven for 15 min, then reduce heat to 350 degrees and bake 15 min.
  • Serve hot or possibly cold.
