Ingredients

  • 1 whole chicken - about 5 lbs.
  • rub for the chicken skin:
  • 1 dash ground oregano
  • 1 dash salt
  • 1 dash black pepper
  • 1 dash garlic powder
  • 1 teaspoon sugar
  • olive oil Drizzle of
  • 3 tablespoons butter
  • 1 tablespoon orange marmalade
  • 2 cloves garlic
  • 1 handful fresh basil
  • 1 dash salt
  • 1 dash black pepper
  • 3 red bell peppers - sliced
  • 1/2 spanish onion - sliced
  • 4 cloves garlic - chopped
  • 1 handful fresh basil chopped
  • 1 dash salt
  • 1 dash red pepper flakes
  • 1 dash dried oregano
  • olive oil Drizzle of
  • butter orange basil
  • roast chicken
  • roasted red peppers

Method

  • Combine all of the seasonings in a small dish and drizzle with olive oil to form a paste. Rub all over the skin.
  • Place the butter and all of the other ingredients in a food processor and process until smooth.
  • Gently lift the skin and rub this butter all over, under the skin.
  • Preheat Oven 375:
  • Place the prepared chicken in a baking pan.
  • Bake 55-60 minutes or until the juices of the chicken run clear.
