Ingredients

  • 2 sprigs fresh lavender
  • 50 ml runny honey
  • 150 grams goat's cheese e.g. garrotxa
  • 1 packages baby leaf salad
  • 1/2 tbsp extra virgin olive oil
  • 1/2 tbsp balsamic vinegar
  • 2 vine tomatoes (optional)
  • 20 grams cranberries or blueberries
  • 20 grams pine nuts (toasted)
  • 20 grams pomegranate seeds (optional)

Method

  • Select a good, soft, goats cheese (for instance, Catalan garrotxa), and cut into thick medallions.
  • Pre-heat the oven to 200C and bake the cheese on an oven tray for 10 minutes or until golden, sprinkling each medallion with fresh lavender beforehand.
  • Remove the goats cheese from the oven and cover liberally in honey.
  • Serve with plenty of baby leaf salad and chopped vine tomatoes (optional), and drizzle the whole salad with extra virgin olive oil and balsamic vinegar.
  • Garnish with toasted pine nuts, or cranberries, blueberries, or pomegranate seeds, depending on your preference.
