Ingredients

  • 6 large sweet potatoes, baked
  • 1/4 c. Parkay margarine, melted
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 tsp. ground nutmeg
  • 3 c. miniature marshmallows
  • 1 (8 oz.) can crushed pineapple, drained
  • 1 c. chopped walnuts

Method

  • Preheat oven to 350°.
  • Cut each potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch shell.
  • Mix potatoes, 2 tablespoons margarine, cinnamon, salt and nutmeg with an electric mixer until smooth.
  • Stir in 2 cups marshmallows, pineapple and 1/2 cup marshmallows and walnuts; spoon into shells.
  • Toss remaining margarine, marshmallows and walnuts; sprinkle on top of potatoes. Bake 20 minutes.
  • Makes 12 servings.
