Ingredients
- 6 large sweet potatoes, baked
- 1/4 c. Parkay margarine, melted
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 1/4 tsp. ground nutmeg
- 3 c. miniature marshmallows
- 1 (8 oz.) can crushed pineapple, drained
- 1 c. chopped walnuts
Method
- Preheat oven to 350°.
- Cut each potatoes in half lengthwise. Scoop out centers, leaving 1/8-inch shell.
- Mix potatoes, 2 tablespoons margarine, cinnamon, salt and nutmeg with an electric mixer until smooth.
- Stir in 2 cups marshmallows, pineapple and 1/2 cup marshmallows and walnuts; spoon into shells.
- Toss remaining margarine, marshmallows and walnuts; sprinkle on top of potatoes. Bake 20 minutes.
- Makes 12 servings.
