Ingredients
- 4 Tbsp. butter or margarine
- 4 c. thinly sliced zucchini
- 1 small onion, thinly sliced
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 small tomatoes, peeled and sliced
- 1/2 c. shredded sharp cheese
Method
- Heat butter or margarine in a heavy skillet over high heat. Add zucchini, onions, salt, pepper and tomatoes.
- Cover and cook for 15 minutes or until tender, stirring occasionally.
- Add cheese; heat until cheese is melted.
