Ingredients
- 2 Tbsp. butter
- 1 large onion, chopped
- 6 medium turnips
- 1 rutabaga, chopped
- 2 potatoes, chopped
- 6 c. chicken stock
- 1 c. heavy cream
- salt and pepper to taste
- lemon zest
Method
- Melt butter in large pan.
- Saute onion; add peeled and chopped vegetables.
- Add chicken stock.
- Simmer 30 minutes or until vegetables are tender.
- Reserve 1 1/2 cup vegetables.
- Puree the rest.
- Return to vegetables; add cream.
- Salt and pepper to taste. Serve hot.
