- 1 lb. smoked turkey sausage
- 1 onion, chopped
- 1 Tbsp. vegetable oil
- 3 c. water
- 2 chicken bouillon cubes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 bay leaf
- 1/2 tsp. thyme
- 3 carrots, sliced
- 3 stalks celery, sliced
- 1/4 head cabbage, chunked
- 2 Tbsp. uncooked rice
- 8 oz. can tomato sauce
- 15 oz. can red beans
- 28 oz. can tomatoes
Method
- In a large saucepan, brown onion in oil until tender.
- Add remaining ingredients.
- Cover and simmer 30 minutes.
- Serves six to eight.
