Ingredients
- 1 (6 oz.) box wild or white rice, uncooked
- 1 can cream of mushroom soup
- 1 c. chicken broth
- 2 c. cooked, cubed turkey
- 1 (4 oz.) small can sliced mushrooms
- salt and pepper to taste
Method
- Combine rice, soup and chicken broth in a 2-quart casserole. Cover and cook on High in the microwave for 10 minutes.
- Stir in turkey, mushrooms and salt and pepper.
- Cover and cook on High for 2 to 3 minutes or until rice is cooked.
- Let stand 5 minutes. Great use of leftover turkey!
