Ingredients

  • 1 1/4 lb. boneless turkey breast
  • vegetable cooking spray
  • 2 cloves of garlic
  • 1 onion, sliced
  • 1 green pepper, sliced
  • 3/4 lb. sliced mushrooms
  • 1 can whole tomatoes
  • 1 can tomato paste
  • 1 Tbsp. dried oregano leaves
  • 1/4 c. chopped parsley
  • salt and pepper
  • Parmesan cheese
  • 1 pkg. spaghetti

Method

  • Cut turkey into small pieces.
  • Spray skillet with cooking spray, add turkey pieces and brown; set aside.
  • Add garlic, onion, green pepper and mushrooms to the pan.
  • Saute over high heat until vegetables are tender.
  • Add tomatoes, tomato paste and oregano; simmer for 10 minutes.
  • Cook spaghetti according to directions. Taste turkey mixture.
  • Add salt and pepper, if desired.
  • Sprinkle top with parsley.
  • Serve over portions of spaghetti.
  • Pass Parmesan cheese at the table.
