Ingredients

  • 1 large apple, cored and diced
  • 1 (11 oz.) can pineapple chunks, drained
  • 1 1/2 c. sliced celery
  • 3 c. cooked rice
  • 2 (6 oz.) cans tuna (packed in water), drained
  • 3/4 c. plain yogurt
  • 1 Tbsp. soy sauce
  • 1 Tbsp. lemon juice
  • 1 Tbsp. sesame seed
  • 1 head Boston lettuce, washed and dried

Method

  • In a large mixing bowl, combine apple, pineapple, celery, rice and tuna.
  • In a small bowl, whisk together the yogurt, soy sauce and lemon juice.
  • Pour dressing over tuna mixture; toss lightly. Chill.
  • Put sesame seed in a heavy skillet; toast them over medium heat until golden, shaking the pan to avoid burning.
  • Remove seeds from pan; let cool.
  • Arrange lettuce leaves on plates.
  • Equally divide tuna mixture among them; sprinkle with toasted sesame seed.
