Ingredients
- 1 large apple, cored and diced
- 1 (11 oz.) can pineapple chunks, drained
- 1 1/2 c. sliced celery
- 3 c. cooked rice
- 2 (6 oz.) cans tuna (packed in water), drained
- 3/4 c. plain yogurt
- 1 Tbsp. soy sauce
- 1 Tbsp. lemon juice
- 1 Tbsp. sesame seed
- 1 head Boston lettuce, washed and dried
Method
- In a large mixing bowl, combine apple, pineapple, celery, rice and tuna.
- In a small bowl, whisk together the yogurt, soy sauce and lemon juice.
- Pour dressing over tuna mixture; toss lightly. Chill.
- Put sesame seed in a heavy skillet; toast them over medium heat until golden, shaking the pan to avoid burning.
- Remove seeds from pan; let cool.
- Arrange lettuce leaves on plates.
- Equally divide tuna mixture among them; sprinkle with toasted sesame seed.
