- 1 can tuna, drained
- 8 oz. shell macaroni, cooked and drained
- 1/2 c. cheese cubes (Swiss, Mozzarella, Cheddar or Jack)
- 2 Tbsp. onion, minced
- 1/4 c. green pepper, minced
- 1/2 c. celery, minced
- 1/4 c. sweet pickle, chopped
- 1/2 c. salad dressing or mayonnaise
- 1/4 c. plain yogurt or sour cream
- 2 tsp. lemon juice
- pepper to taste
- 4 tomatoes
- lettuce leaves
Method
- Combine tuna, macaroni, cheese, onion, green pepper, celery and pickle.
- In a separate bowl, mix together salad dressing, yogurt, lemon juice and black pepper.
- Pour dressing over tuna mixture and toss.
- Chill at least one hour.
- Remove stems from tomatoes, place each on a bed of lettuce and cut through to within 1/4-inch of bottom to form six equal sections.
- Spread sections and scoop in tuna mixture.
