Ingredients
- 1 large apple, sliced
- 1 banana, sliced
- 1/3 c. oat bran
- 1/3 c. muesli
- 1 tsp. vanilla
- 2 eggs
- 1/2 c. low-fat Ricotta
- 2 Tbsp. roasted sesame seed
- 1 tsp. baking powder
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 c. blueberries
Method
- Preheat oven to 425°.
- Blend all ingredients except berries in a food processor.
- Fold in the berries as you pour the batter. Grease a 12 muffin pan and pour in batter.
- Bake about 20 minutes. Makes 12 muffins.
