Ingredients

  • 3 eggs, well beaten
  • 1 3/4 c. sugar
  • 1 c. cooking oil
  • 2 c. presifted flour
  • 1 box French vanilla pudding
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • salt
  • 1/2 c. raisins (optional)
  • 5 tart apples, pared and diced
  • 1 c. coconut
  • 1 c. chopped nuts
  • powdered sugar

Method

  • Blend eggs, sugar and oil.
  • Sift flour and baking soda; add pudding, cinnamon and salt.
  • Stir into egg mixture and fold in apples, coconut and nuts.
  • You can add about 1/2 cup milk as mixture is very thick.
  • Spoon in lightly greased 9 x 13-inch pan and bake at 350° for 1 hour.
  • Cool and cut into squares.
  • Sprinkle with powdered sugar.
