Ingredients

  • 1 (12 oz.) pkg. dry red beans
  • 2 1/2 c. water
  • 1/3 lb. salt pork, diced
  • 2 lb. beef cubes
  • 1 c. chopped onions
  • 1 clove garlic, minced
  • 1 (6 oz.) can tomato paste
  • 1 tsp. chili powder
  • 1 tsp. cumin seed
  • 1/2 tsp. crushed, dried red pepper
  • 1 bay leaf

Method

  • Wash beans and soak overnight in cold water; drain 2 1/2 cups water and bring to a boil.
  • Turn down and simmer 1 hour.
  • Render salt pork in skillet; add beef and brown.
  • Drain.
  • Add to beans with remaining ingredients.
  • Cover and simmer for 2 hours, adding hot water as needed.
