- 1 (12 oz.) pkg. dry red beans
- 2 1/2 c. water
- 1/3 lb. salt pork, diced
- 2 lb. beef cubes
- 1 c. chopped onions
- 1 clove garlic, minced
- 1 (6 oz.) can tomato paste
- 1 tsp. chili powder
- 1 tsp. cumin seed
- 1/2 tsp. crushed, dried red pepper
- 1 bay leaf
Method
- Wash beans and soak overnight in cold water; drain 2 1/2 cups water and bring to a boil.
- Turn down and simmer 1 hour.
- Render salt pork in skillet; add beef and brown.
- Drain.
- Add to beans with remaining ingredients.
- Cover and simmer for 2 hours, adding hot water as needed.
