Ingredients

  • 1/2 c. sugar
  • 1/8 tsp. salt
  • 1/3 c. cornstarch
  • 2 1/3 c. milk
  • 2 eggs, separated
  • 1 tsp. vanilla
  • 1 c. coconut
  • 2 Tbsp. margarine
  • 1 baked pie shell

Method

  • Mix sugar, salt and cornstarch in saucepan with 1/3 cup milk. Beat egg yolks; add to remaining milk.
  • Stir well.
  • Add egg mixture to saucepan.
  • Cook over medium heat, stirring constantly, until thick.
  • Remove from heat.
  • Stir in vanilla, margarine and coconut.
  • Pour into baked pie shell.
  • Beat egg whites, adding 1/4 cup sugar and cover pie.
  • Bake 10 minutes at 375°.
