Ingredients
- 1/2 c. sugar
- 1/8 tsp. salt
- 1/3 c. cornstarch
- 2 1/3 c. milk
- 2 eggs, separated
- 1 tsp. vanilla
- 1 c. coconut
- 2 Tbsp. margarine
- 1 baked pie shell
Method
- Mix sugar, salt and cornstarch in saucepan with 1/3 cup milk. Beat egg yolks; add to remaining milk.
- Stir well.
- Add egg mixture to saucepan.
- Cook over medium heat, stirring constantly, until thick.
- Remove from heat.
- Stir in vanilla, margarine and coconut.
- Pour into baked pie shell.
- Beat egg whites, adding 1/4 cup sugar and cover pie.
- Bake 10 minutes at 375°.
