Ingredients

  • 1 medium onion, sliced
  • 3/4 lb. Cheddar cheese
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. chicken broth
  • 2 c. milk
  • 1 can whole tomatoes, drained, seeded and chopped

Method

  • Melt butter in large pot at medium heat.
  • Add onions and saute until transparent (5 minutes).
  • Stir in flour; stir until smooth.
  • Add milk and tomatoes.
  • Gradually add chicken broth, stirring until smooth.
  • Bring to a boil and simmer 10 minutes, stirring occasionally.
  • Cheese can be added now or individually when serving soup.
  • Serves 6 to 8.
