Ingredients

  • 1 1/2 lb. lean ground beef
  • 1 1/2 c. thinly sliced carrots
  • 1 c. thinly sliced celery
  • 2 c. hot water
  • 1 1/2 c. instant rice
  • 1 envelope onion soup mix
  • 1 bay leaf

Method

  • Combine beef coarsely into 3 to 5-quart casserole.
  • Mix in carrots and celery.
  • Cover and microwave on High for 3 1/2 to 6 1/2 minutes or until beef is set, stirring once or twice.
  • Add remaining ingredients.
  • Microwave, covered, 12 to 18 minutes, or until vegetables are tender, stirring once or twice.
  • Remove bay leaf before serving.
  • Serves 4 to 6.
