Ingredients
- 1 1/2 lb. lean ground beef
- 1 1/2 c. thinly sliced carrots
- 1 c. thinly sliced celery
- 2 c. hot water
- 1 1/2 c. instant rice
- 1 envelope onion soup mix
- 1 bay leaf
Method
- Combine beef coarsely into 3 to 5-quart casserole.
- Mix in carrots and celery.
- Cover and microwave on High for 3 1/2 to 6 1/2 minutes or until beef is set, stirring once or twice.
- Add remaining ingredients.
- Microwave, covered, 12 to 18 minutes, or until vegetables are tender, stirring once or twice.
- Remove bay leaf before serving.
- Serves 4 to 6.
