- 14 cup whole wheat flour
- 14 cup soy flour
- 12 cup oatmeal
- 4 ounces soft tofu
- 13 cup chopped pecans
- 13 cup dried cranberries (Craisins)
- 1 egg
- 18 cup oil
- 13 cup honey
- 34 teaspoon cinnamon
- 14 teaspoon salt
- 1 teaspoon baking powder
- 18 teaspoon baking soda
Method
- mix all ingredients until just blended.
- Do not overmix.
- fill 6 large muffin cups 2/3 full.
- bake 425 degrees for 15 min or until done.
