Ingredients

  • 2 3/4 pounds whole chicken
  • 4 tablespoons olive oil
  • 1 tablespoon sweet paprika
  • 4 tablespoons fresh thyme leaves
  • 1 1/4 pounds potatoes peeled and sliced
  • 1 pound zucchini sliced
  • 1 pound carrots peeled and sliced

Method

  • Preheat oven to 400°F. Season chicken then place in a roasting pan. Roast for 45-50 mins.
  • Mix oil, paprika and thyme then brush over chicken. Add potatoes, zucchini and carrots to pan then place back in oven for 25-30 mins. Transfer vegetables to a serving platter and place chicken on top. Serve.
