Ingredients

  • 1 lb cleaned Baby Spinach
  • 12 lb washed and sliced strawberry
  • 12 cup toasted and cooled slivered almonds
  • 14 onion, sliced into thin strips
  • 14 cup crumbled blue cheese
  • 2 cups balsamic vinegar
  • 12 cup extra virgin olive oil

Method

  • Combine all ingredients except balsamic vinegar and olive.
  • Simmer balsamic vinegar on stovetop until it reduces down to about 1/2 cup and is a syrupy consistency.
  • Allow to cool.
  • Drizzle balsamic vinegar and olive oil on salad to taste and toss.
  • NOTE: You can also add this tasty salad to a to a wheat wrap with grilled chicken.
  • An easy on-the-go option for lunch or a quick dinner.
