Ingredients

  • 2 tbsp. butter
  • 1 small onion chopped
  • 1/2 cup chopped green pepper
  • 1 can Cream of Chicken soup
  • 1 can (8oz.) sliced mushrooms
  • 1 jar (2oz.) chopped pimentos
  • 1/2 tbsp. dried basil
  • 1 package (8oz) egg noodles, cooked and drained
  • 3-4 cups cooked chicken, diced
  • 2 cups grated cheddar cheese
  • 2 cups cottage cheese
  • 1/2 cup grated parmesan cheese

Method

  • Saute the onion and pepper in the butter until tender. Remove from heat and add soup, mushrooms, pimentos and basil, set aside. Mix together the noodles, chicken, cheddar cheese, cottage cheese and parmesan cheese. Pour soup mixture over noodles and combine well. Pour into greased 9x13 inch baking dish. Bake, uncovered, at 350 degrees for 50 minutes or until bubbly.
