Ingredients

  • 8 ounce. thin spaghetti
  • 1/2 c. unsalted peanuts
  • 3 tbsp. soy sauce
  • 2 tbsp. lemon juice
  • 1 tbsp. honey
  • 3 tbsp. water
  • 1 tbsp. vegetable oil
  • 2 cloves garlic, minced
  • 1/2 c. thinly sliced onion
  • 1 c. snow peas, cut into 1" lengths
  • 3 c. fresh bean sprouts
  • 1/4 c. thinly sliced green onions (green part only)

Method

  • Cook spaghetti and drain.
  • Chop peanuts (blender good).
  • Combine soy sauce, lemon juice, honey and water.
  • Heat oil in pan over medium heat.
  • Add in garlic and onions.
  • Stir about 2 min, then add in snow peas, bean sprouts and 1/2 the soy mix.
  • Cook about 3 min, stirring.
  • Add in remaining soy mix along with minced peanuts, green onions and liquid removed pasta.
  • Toss well and serve.
  • 4 servings.
