Ingredients

  • 1 kg (2 lb 4 oz) minced (ground) chicken
  • 90 g (3 1/4 oz/1 cup) fresh breadcrumbs
  • 4 spring onions (scallions), sliced
  • 1 tablespoon ground coriander
  • 3 very large handfuls coriander (cilantro), chopped, plus extra leaves, to garnish
  • 3 tablespoons sweet chilli sauce
  • 1-2 tablespoons lemon juice
  • 2 tablespoons oil
  • quartered lime, to serve

Method

1. Preheat the oven to 200°C (400°F/Gas 6). Mix the minced chicken and breadcrumbs in a large bowl.

2. Add the spring onion, ground and fresh coriander, chilli sauce and lemon juice, and mix well. Using damp hands, form the mixture into evenly shaped smaller balls or larger burger patties.

3. Heat the oil in a large non-stick frying pan and cook the chicken balls over high heat until browned all over. Drain well on paper towels and then place them on a baking tray and bake (5 minutes for balls or 10-15 minutes for patties), until cooked through. Serve with lime quarters and garnish with coriander leaves.
